Ingredients:
1/2 cup (120mL) unsalted butter, softened
1/3 cup (80mL) sugar
2 eggs
1 cup (240mL) cream-style corn
1 Tbsp (15mL) canned green chilies, drained and chopped
1/2 cup (120mL) sharp Cheddar Cheese, shredded
1/2 cup (120mL) all-purpose flour
1/2 cup (120mL) yellow cornmeal
2 tsp (10mL) baking powder
1 Tbsp (15mL) Southwest Chipotle Seasoning Blend
Directions:
Beat together butter and sugar in a large bowl. Add eggs one at a time, beating after each addition. Fold in creamed corn, chilies, and cheese.
Combine flour, cornmeal, baking powder and Southwest Chipotle Seasoning Blend in another bowl. Add flour mixture to corn mixture; stir until smooth. Pour batter into lightly greased 8x8? (20 x 20cm) baking pan.
Bake in a 325ºF (170ºC) preheated oven for 40-45 minutes, until a toothpick inserted in center of the bread comes out clean. Cut into 16 squares, serve warm.
