1/4 cup chunky salsa
1/3 cup flavored bread crumbs, divided
2 aprox 5 oz skinless boneless chicken breasts
aprox 1 1/2 oz of pepperjack cheese shredded
1. Pre-heat and spray with cooking spray.
2. Combine salsa and three tablespoons of bread crumbs
3. cut each chicken breast 3/4 of the way through and lay open butterfly style.
4. spoon half of salsa mixture into each open breast
4. Spray both sides of chicken with cooking spray and roll them in remaining bread crumbs
5. place chicken into cooking base and cook 15 minutes or until meat thermometer reaches 180°.
6. Remove chicken top each peice with half of pepperjack cheese and serve.. (optional: microwave chicken for 30 sec or so to melt cheese on top.
Serving suggestion: serve with Spanish rice
