4 oz. ham cut into small cubes
2 cups chopped onions
2 Tbsp. butter or margarine
2 Tbsp. flour (or cornstarch)
1 carton (32 oz) Kitchen Basics Chicken Stock
2 large potatoes, peeled and diced
1 cup evap. skim milk (or half & half)
4 cups corn (fresh or frozen)
1 red bell pepper, diced
3 green onions cut into slices
1 Tbsp. chopped cilantro
Saute the ham & onions in butter for 5 mins. Stir in flour to thicken. Add stock & potatoes; cook on medium-low heat 15 mins. Add milk, corn, red pepper & green onions; cook for 10 mins. Salt & pepper to taste. Garnish with cilantro.
