•6 - cups water
•4- ounces dried chipotle chiles, stems removed
•2-tablespoons achiote paste
•1- cup firmly packed brown sugar
•1/4- cup red wine vinegar
•2- teaspoons salt
•1/4- cup olive oil
1.combine all the ingredients in a saucepan over high heat
2.bring mixture to a boil..then decrease heat to med-low and simmer for 30- 45 minutes
3.remove from heat, coo completely
4.puree the mixture in a food processor until smooth
5.store in airtight container for up to 3-4 days
6.makes 1/4 cup
